Ajzaa:

Chicken: Derh Kilo

Ghee: Ek cup

Adrak lehsan ka paste: Ek khaney ka chamach

Lal mirch (pisi hui): 3 khaney ke chamach

Namak: 2 chaye ke chamach

Nihari masala: 3 khaney ke chamach

Garam pani: 6 cup

Meda: Adha cup

Gandum ka aata: Adha cup

Garnishing ke liye

Adrak (slice ma kati hui): Hasb-e-zaroorat

Hari mirch (kati hui): Hasb-e-zaroorat

Hara dhaniya: Hasb-e-zaroorat

Leemu ke tukrey (katey huwe): Hasb-e-zaroorat

Nihari masala banane ke liye

Dar cheeni: 6 tukrey

Kali elaichi: 6 adad

Hari elaichi: 12 adad

Kali mirch: Adha cup

Sonf: Adha cup

Chaney (bhuney huwe): Adha cup

Khashkhash: Adha cup

Kachri powder: 2 khaney ke chamach

Long: 2 khaney ke chamach

Javetri: 2 khaney ke chamach

Sonth (pisi hui): 2 khanye ke chamach

Lal mirch (pisi hui): 4 khaney ke chamach

 

Tarkeeb:

Nihari ke liye:

Ek bartan ma ghee garam kar ke adrak lehsan ka paste or chicken dal kar fry karen. Phir is ma pis lal mirch, namak, nihari masala or thora sa pani dal kar ach tarha bhoon len. Is ma 6 cup garam pani shamil karen or dhak kar 30 minute tak pakayen. Meda or gandum ka aata chaan kar thore se pani ma paste bana len. Is paste ko b nihari ma shamil karen or musalsal chamach hilate rahen. Isey dhak kar 15 minute tak pakayen yahan tak ke ghee uper aa jaye. Mazedar chicken nihari recipe tyar hai. Akhir ma isey slice ma kati adrak, kat hari mirch, hara dhaniya, leemu ke tukrey or garma garam naan ke sath pesh karen.

Nihari masala ke liye:

Grindar ma dar cheeni, kali elaichi, hari elaichi, kali mirch, sonf, bhuney chaney, khashkhash, kachri powder, long, javetri, pisi sonth or pisi lal mirch dal kar achi tarha pees len. Ab isey hawa band dabbey ma bhar kar rakh den or hasb-e-zaroorat istemal karen.
